Vegeterian Chili

This Chili is all vegeterian, low sugar and it serves about 8 people

Ingredients

  • 4 teaspoons of olive oil
  • 2 cups of chopped onions
  • half a cup of green peppers
  • 3 cloves of chopped garlic
  • 1 chopped jalepeno
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 can of tomatoes
  • 1 zuchini
  • 30 ounces of kidney beans
  • 40 grams of cilantro

Heat the pot, add olive oil, onions, peppers, garlic and jalepeno.  Let it sit for about five minutes  until the onions are browned.  Add chillin powder and cumin, let it sit for a minute while stirring.

Chop the tomatoes and add the juice and the zucchini.  Once it is boiling let is sit for 15 minutes while stirring.  Stir in the beans 5 more minutes.  Stir in the Silantro.

Serve while hot!

Add some whole wheat garlic bread or crackers to add a carb to the meal!
