Chicken Brushchetta
Here is a great chicken dish for the holidays. It also has no sugar and is low in saturated fat if you use lean chicken.
Ingredients
- 4 Chicken Breasts (Cut off excess fat)
- 1 Onion (chopped)
- 2 teaspoons of garlic (chopped)
- 1 teaspoon of oregano
- 1 can of diced tomatoes
- 1/4 cup of stuffed green olives (sliced)
- 1/4 sun dried tomato salad dressing
To cook
1. Cook onions and garlic in a pan until browned
2. Cook chicken in pan, 3 minutes each side
3. Add tomatoes, dressing, oregano, and green olives. Stir for 5 minutes. Be sure chicken is cooked.
Serve with vegetables for a spicy Christmas treat!
